The **Robert Herder K1922 paring knife** is a small and light knife for precise cutting tasks. Because of the compact size the knife feels great in hand. While a chef’s knife might be a little too big this paring knife will definitely come in handy.
To produce a thin knife you need, in addition to craftsmanship, a strong type of steel. This is the reason that (non-stainless) carbon steel is used instead of weaker stainless steel. However, this carbon steel is not stainless and needs some attention. It needs to be cleaned immediately after use. Perhaps even more important is the direct drying of the knife. The knife is absolutely not dishwasher safe! Rinse it off and dry it after use and you will enjoy these knives your whole life.
The ergonomics are also great. The handle with rounded shapes is slim and graceful and fits perfectly in hand. This knife comes with a bottle of maintenance oil for the wooden handle.
