Just like a Diafold sharpening stone this conical diamond sharpening steel has the design of a butterfly knife. The handle is folded around the diamond sharpening steel so it is protected when it is not being used. And thanks to the handle, the sharpening is very easy.
With this sharpening steel serrated edges of, for example, a bread knife can be sharpened. Because of the conical shape, larger and smaller serrated edges can be sharpened. You use the part of the sharpening steel with the proper diameter. So, the top for smaller serrated edges and the heel of the steel for the larger serrated edges.
Not only serrated knives but also other sharpened objects with curves, such as a spud-hook, can be sharpened with this sharpening steel.
**Information about grain size DMT sharpening stones**
The grain size of a diamond stone and a water stone cannot be plainly compared. This is due to the fact that the construction and materials used are essentially different. In case of a water stone the sharpening grains are incorporated into the stone. These grains will be loosened from the stone during the sharpening process in the form of a kind of sharpening paste that arises. In case of a diamond stone, the diamonds are tightened into the surface of the stone.
**Important to know**
You may choose for dry or wet sharpening with the sharpening stones by DMT. The advantage of wet sharpening is that the stone is lubricated and sharpening residues are disposed of. Only use water and never oil if you want to sharpen wet. In addition it is good to know that a diamond sharpening stone has to be used a couple of times in order to obtain the optimum sharpening result. The operation of a new sharpening stone is a little too coarse. Only after 5 to 10 knives the stone will obtain its definitive working.
