The **Shizu Hamono Morinoki SM-4000 bread knife** is a Japanese bread knife that was designed to be simple and efficient. The square handle made from zelkova wood gives the knife its tranquil and natural appearance. At the tip of the blade the serrations are pointed and on the rest of the blade the serrations are wavy. This remarkable grind is what makes this bread knife perfect for cutting through the hardest breads and softest cakes. And what about hard vegetables and fruit like melons, pumpkins and celeriac! This simple and versatile knife is a must-have for any kitchen!
## Shizu Hamono Morinoki blade
The blade is made from Daido DSR-1k6 steel. A very strong type of stainless steel. It is not the hardest steel, but that makes the knives easy to use, relatively flexible and also very easy to sharpen yourself.
Of course, sharpening this bread knife with its particular grind is a bit trickier. You’ll need a small sharpening steel. [Read more about sharpening a bread knife here.](/en/ct/sharpening-a-bread-knife.htm)
## Shizu Hamono Morinoki handle
The handle is made from one piece of Japanese zelkova wood. A light type of wood, both in weight and colour. The beautiful markings run lengthwise across the handle. This makes it clear that the handle isn’t entirely square. The end of the handle is slightly bigger. This gives you a firm grip and good control over the blade.
Even though the handle is coated in clear varnish, we recommend keeping it as dry as possible. Wash the knife by hand and then dry it well.
Because of this striking wood grain, each knife is unique. It is therefore possible that the knife you see in our photos will differ slightly from the knife you receive at home. These will only be minor deviations in the pattern on the handle. The material used and the quality standard are the same for each knife.
## Shizu Hamono: Japanese craftsmanship
The Japanese Shizu Hamono kitchen knives were born out of passion, traditional techniques and new standards. At Shizu Hamono, they mainly focus on kitchen knives and cookware. The kitchen knives are forged in Seki, Japan and then hand-finished and checked by a small group of craftsmen. Because of this, the Shizu Hamono kitchen knives meet the highest of standards.
